I wanted to make a mint chocolate chip ice cream that tasted like real fresh mint, not just peppermint extract, and this absolutely delivered. The fresh mint gives it a bright, garden-fresh flavor, while the coconut milk makes it rich and creamy without tasting like coconut.

Pop this in a freezer safe container after churning for 2-4 hours or enjoy it like soft serve!

The biggest surprise? This was a huge hit in my house, even with the non-vegans, and that’s a big accomplishment in this house! Everyone loved it, and no one guessed it was made with coconut milk.

Fresh mint makes all the difference! Don’t be tempted to substitute mint extract—you’ll get a much brighter, fresher flavor from real garden mint. Also, chopping a dark chocolate bar into shards creates a better texture than using chocolate chips.
