Hi, I’m Jen!
I live just outside Boston with my husband John, my brother Josh and our dog Danny, and a growing flock of very opinionated chickens and ducks.
During the week, I own Happy Tails Adventures, where I spend my days hiking with dogs. At home you’ll usually find me in the garden, trying a new vegan recipe, sitting around a campfire at our camper, or convincing myself I definitely have room for one more plant.
A few fun facts about me
I grow vegetables (and always more tomatoes than I planned.)
I own a dog hiking business.
I’m learning to cook more plant-based meals.
My favorite place is around a campfire.
I love horror movies and cozy mysteries.
My ducks are named after the Pink Ladies: Rizzo, Frenchie & Sandy
Our Central Coop houses all the chickens named after the cast of Friends

I started Acorn & Birch years ago as a place to share projects and recipes.
Today it has become something much more personal.
It’s where I document the ordinary moments that make a meaningful life, gardens, good food, campfires, changing seasons, and the journey toward living more intentionally.
I’m so happy you’re here.

Vegan Mint Chocolate Chip Ice Cream
If your garden has ever produced more mint than you know what to do with, this recipe is for you. I wanted to make a mint chocolate chip ice cream that tasted like real fresh mint, not just peppermint extract, and this absolutely delivered. The fresh mint gives it a bright, garden-fresh flavor, while the…
Creating a Backyard Sanctuary
Creating a sanctuary doesn’t require acres of land. It begins with a simple decision to make the space you have a little more welcoming for wildlife, for the animals in your care, and for yourself.
