Impromptu Pizza

I’ve been feeling the strain of our monthly grocery bill increasing. I have been trying to cut costs where we can but it is painful! Anyone else feeling this way? With no extra cash, a grocery store run wasn’t in the cards today. I had to figure out dinner with what we had in the house.

A few of the things I needed were already on the counter. Don’t worry….no rutabaga pizza today.

Cooking for 5 people can be a little bit tough, especially when I have a few picky eaters to please. Pizza is one of the things that everyone likes and is easily made to fit whatever your heart desires. Cheese, veggies, pepperoni, pineapple, the skies the limit!

Luckily, I always try to keep active yeast and flour in the pantry. That way I can throw together a meal, even when the fridge and cupboard and looking a little bare. This pizza dough never fails me (as long as my yeast is good!).

I whipped up the dough and put together a quick sauce. That is my “recipe” if you can call it that. I don’t add exactly the same amount every time, changing this and that, depending on my mood and meal.

Quick Marinara Sauce

28 oz Crushed tomatoes

4 oz. Tomato paste

1 onion, chopped

2 – 4 garlic cloves, minced

1 tsp each, oregano, thyme, marjoram

1 bay leaf

salt and pepper to taste

Cook the onions until soft, add garlic and cook for 30 seconds. Add in crushed tomatoes, 28oz of water, tomato paste, herbs and seasonings. Bring to boil. Turn down the heat and simmer for 2 hours or longer. Continue simmering until the sauce reaches the consistency you prefer.

This is how thick I prefer the sauce for pizza. Simmered for about 4 hours.

Now back to the dough. This makes two pizzas. You can freeze half if you only want one pizza.
